Pico de gallo is a type of salsa made with fresh ingredients. It is great served with tortilla chips, burritos, tacos, or any other type of Mexican dish! While tomatoes aren't in season for most of us right now, I'm still often able to find them on sale for 50 cents per pound (or less), making this a pretty inexpensive addition to a meal (I'll write about one of my favorites next week!).
Pico de Gallo
3-4 medium tomatoes, diced
1/2 cup red onion, diced
2 Tbsp. lime juice
1-2 Tbsp. jalapenos, seeded and minced
1/4 tsp. salt
1/8 to 1/4 cup cilantro, minced (optional)
Combine the ingredients, taste, and make necessary adjustments to suit your taste preferences. Let sit for at least 5 hours to let the flavors combine. Easy, right?
